What’s a Buckle?

What’s a Buckle? A Buckle is cake, topped with fruit and streusel.
What’s a Streusel? When fat, flour and sugar come together into a crumble, that is Streusel! It is used as a topping, added before baking.

A Blueberry Buckle is this year’s Association of CT Fairs, Junior* Baking Contest at the Cannon Grange’s Agricultural Fair.

A Buckle consists of fruit and cake baked together with streusel topping. As it bakes the fruit and cake “buckle” to resemble a coffee cake.

You may have heard of Blueberry Betty’s, Blueberry Crumble or even a Blueberry Crisp. They all have characteristics different from a Buckle.

Betty’s: Streusel is layered between the fruit.
Crisps: Streusel usually contains oats.
Crumbles: Streusel does not contain oats.

Blueberry Buckle

For the cake:

  • 3/4 cup white sugar
  • 1/4 cup butter
  • 1 egg
  • 2 teaspoons lemon zest
  • 1 1/2 cups plus 1 tablespoon King Arthur Baking All-Purpose flour, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 1/2 cups fresh blueberries

For the topping:

  • 1/4 cup plus 1 tablespoon butter
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1/3 cup King Arthur Baking All-Purpose flour
  • 1/2 teaspoon ground cinnamon
